■ Straw-grilled bonito of the first catch of the season, with gazpacho made from fruit tomatoes.
Vegetables and barley mixed with whitebait bagna cauda.

■ Sautéed foie gras with sautéed apples
Roasted cabbage puree and Gorgonzola cheese with a soft-boiled egg.
